Culinary school taught me that in cooking there are recipes and in baking there are formulas. Needless to say I am not a major baker. Recipes can be tweaked, enhanced, simplified and substituted. A proper Victoria Sponge requires precise measurements, exacting technique and just the right baking time to live up to it’s namesake. Way too much stress!
